Sweet & Sour Glazed Chicken with Quick Cucumber Salad

- 2 chicken breasts, cut into 1-inch pieces
- 1 tbsp cooking oil
- 2 cloves garlic, minced
- 1/4 cup sugar
- 2 tbsp apple cider vinegarmissing
- 1 tbsp soy saucemissing
- 1 tbsp ketchupmissing
- 1 tsp cornstarch (mixed with 1 tbsp water)missing
- 1 cucumber, thinly sliced
- 1/4 red onion, very thinly sliced (for salad)
- 1 tbsp white vinegar (for salad)missing
- 1 tsp sugar (for salad)
- 1/4 tsp salt (for salad)

For the salad: In a bowl, combine thinly sliced cucumber and red onion. Whisk together white vinegar, 1 tsp sugar, and 1/4 tsp salt. Pour over vegetables and toss. Let sit while cooking chicken.

For the chicken glaze: In a small bowl, whisk together 1/4 cup sugar, apple cider vinegar, soy sauce, and ketchup. Set aside.

Heat cooking oil in a large skillet over medium-high heat.

Add chicken pieces and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.

Add minced garlic to the skillet and cook for 30 seconds until fragrant.

Pour in the glaze mixture and bring to a simmer. Stir in the cornstarch slurry.

Cook, stirring, until the sauce thickens and becomes glossy.

Return cooked chicken to the skillet and toss to coat evenly in the sweet and sour glaze.
