First, make a simple pastry: In a bowl, combine 1/2 cup flour and 1/4 cup cold butter (cut into small pieces). Rub butter into flour with your fingers until crumbly. Add ice water 1 tbsp at a time, mixing until dough just comes together. Form into a disc, wrap, and refrigerate for 15 minutes.

In a pan, melt 1 tbsp butter over medium heat. Add thinly sliced onion and cook until softened and slightly caramelized, about 5-7 minutes. Stir in 1 tbsp sugar, salt, and pepper. Set aside.

Preheat oven to 375°F (190°C).

On a lightly floured surface, roll out the pastry dough to about 1/8-inch thickness. Cut out two circles (about 5-6 inches in diameter) or other desired shapes.

Place pastry circles on a baking sheet. Spread the caramelized onion mixture evenly over the pastry, leaving a small border.
