Spicy Cucumber Chicken Stir-fry

- 2 chicken breasts, thinly sliced
- 1 tbsp cooking oil
- 1/2 onion, thinly sliced
- 3 cloves garlic, minced
- 1 cucumber, deseeded and sliced into half-moons
- 1 tomato, cut into wedges
- 1 tbsp soy saucemissing
- 1 tsp brown sugarmissing
- 1/2 tsp red pepper flakes (optional)missing
- 1/4 cup water or chicken brothmissing
- 1 tsp cornstarch (mixed with 1 tbsp water)missing

In a small bowl, whisk together soy sauce, brown sugar, red pepper flakes (if using), and water/broth. Set aside.

Heat cooking oil in a large skillet or wok over high heat.

Add sliced chicken and stir-fry until cooked through and lightly browned. Remove chicken from the wok and set aside.

Add sliced onion to the wok and stir-fry for 2 minutes until softened.

Add minced garlic and stir-fry for 30 seconds until fragrant.

Add sliced cucumber and tomato wedges to the wok, stir-fry for 2-3 minutes until slightly tender-crisp.

Return cooked chicken to the wok. Pour in the sauce mixture.

Bring to a simmer, then stir in the cornstarch slurry. Cook, stirring, until the sauce thickens.
