  • 1 tbsp cooking oil
  • 1/2 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cucumber, deseeded and sliced into half-moons
  • 1 tomato, cut into wedges
  • 1 tbsp soy saucemissing
  • 1 tsp brown sugarmissing
  • 1/2 tsp red pepper flakes (optional)missing
  • 1/4 cup water or chicken brothmissing
  • 1 tsp cornstarch (mixed with 1 tbsp water)missing

    In a small bowl, whisk together soy sauce, brown sugar, red pepper flakes (if using), and water/broth. Set aside.

    Heat cooking oil in a large skillet or wok over high heat.

    Add sliced chicken and stir-fry until cooked through and lightly browned. Remove chicken from the wok and set aside.
