Instructions
- 1
For the dough: In a large bowl, combine flour and salt. Cut in the cold butter with a pastry blender or your fingertips until crumbly.
- 2
Gradually add ice water, mixing until dough comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.
- 3
While dough chills, prepare filling: Heat olive oil in a skillet over medium heat. Add sliced onion and bell pepper. Sauté until softened, about 8-10 minutes. Season with salt and pepper. Let cool slightly.
- 4
Preheat oven to 375°F (190°C).
- 5
On a lightly floured surface, roll out the dough into a 12-inch circle.
- 6
Transfer dough to a baking sheet lined with parchment paper. Spread the cooled vegetable filling over the dough, leaving a 2-inch border.
- 7
Fold the edges of the dough over the filling, crimping lightly. Brush the crust with a whisked egg (optional, for shine).
- 8
Bake for 30-35 minutes, or until the crust is golden brown and the filling is tender. Let cool slightly before serving.
