
Savory Beef & Egg Crepes

Instructions

In a bowl, whisk egg, flour, milk, salt, and pepper until smooth to make the crepe batter. Let rest for 2 minutes.

Heat 1/2 tbsp cooking oil in a non-stick skillet over medium heat.

Add diced beef and cook until browned and cooked through, about 4-5 minutes. Season with salt and pepper. Set aside.

Wipe the skillet clean. Add remaining 1/2 tbsp cooking oil. Pour about half of the crepe batter into the skillet, swirling to coat the bottom evenly.

Cook for 2-3 minutes until the edges are golden and the top is set. Flip and cook for another minute.

Place the cooked crepe on a plate. Fill one half with the cooked beef and crumbled Goat Cheese.

Fold the other half over. Repeat for the second crepe (if you want to make two small crepes instead of one large one). Serve warm.
