In a medium bowl, combine the flour and salt.

Gradually add the warm water and 1 tablespoon of olive oil, mixing with a spoon until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. If it's too sticky, add a tiny bit more flour; if too dry, add a few drops of water.

Divide the dough into 4 equal pieces. Roll each piece into a thin round, about 6-8 inches in diameter.

Heat a skillet or frying pan over medium-high heat. Lightly brush the pan with olive oil (or use a dry pan for a less oily bread).
