- 2 fresh apricots
- 2 tbsp butter
- 2 slices of bread (missing)missing
- 1 tbsp sugar (for caramelizing, optional)

Halve and pit the apricots. If desired, slice them into smaller wedges.

Melt 1 tablespoon of butter in a non-stick pan over medium heat.

Add the apricot pieces to the pan. Cook for 3-5 minutes, turning occasionally, until slightly softened and caramelized. If using sugar, sprinkle it over the apricots now and cook until melted and syrupy.

Remove apricots from the pan and set aside.

Melt the remaining 1 tablespoon of butter in the same pan. Place the bread slices in the pan and toast them until golden brown on both sides. (Alternatively, you can toast the bread in a toaster first and then butter it lightly).

Place the toasted bread on plates and top generously with the pan-fried apricots. Serve warm.
