One-Pan Bacon & Egg Frittata

Preheat oven to 375°F (190°C).

Cook bacon in an oven-safe, cast-iron skillet over medium heat until crispy. Remove bacon, chop, and set aside. Drain most of the bacon fat, leaving about 1 teaspoon in the skillet.

In a bowl, whisk eggs with a splash of milk/cream, salt, and pepper.

Sprinkle chopped bacon into the bottom of the skillet. Optionally, add any missing chopped vegetables like onion or bell pepper.

Pour the egg mixture over the bacon (and vegetables).

Carefully transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is set and lightly golden brown.
