  • 2 chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup uncooked white ricemissing
  • 1 cup water (or chicken broth)missing

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro (optional, for garnish)missing
