  • 1 head Endive, chopped
  • 1/2 Jalapeño, thinly sliced
  • 1 tbsp olive oil
  • 1 egg, whisked
  • Salt to taste
  • Pepper to taste

    Heat olive oil in a large skillet or wok over medium-high heat.

    Add sliced jalapeño and stir-fry for 1-2 minutes until fragrant.

    Add chopped endive and stir-fry for 3-5 minutes until tender-crisp.

    Push vegetables to one side, pour whisked egg into the other side of the pan. Scramble the egg until cooked, then mix with the vegetables.
