In a large bowl, whisk together the flour, sugar, and salt.

In a separate bowl, whisk the eggs, then gradually add the milk and water, whisking until combined.

Pour the wet ingredients into the dry ingredients gradually, whisking constantly until the batter is smooth. Stir in the melted butter.

Cover the bowl and refrigerate for at least 30 minutes (or up to overnight) to allow the flour to fully hydrate. This step is optional but recommended for best results.

Heat a lightly buttered 8-inch non-stick skillet over medium heat. Pour about 1/4 cup of batter into the center of the skillet, swirling to coat the bottom evenly.
